It is my distinct pleasure
to commend this beautiful and appetizing publication that offers us excellent products
from the agricultural know-how of the people of Île d’Orléans. The book is a feast
for the eyes and palate and takes us on a journey through the island, a unique land
rich in beauty and steeped in history. This great project is a testament to the
renewal and innovation of its traditions. This book shows us that our agriculture
has soul, passion, pride and enterprising faces. These are the farmers who make
this their profession and contribute, through patience, hard work and talent, to
the pleasure of good eating, which has been cultivated throughout the years. This
has served us well because the “palette” of our crops has expanded, as seen through
the fifty or so agricultural products featured in these recipes. Much more than
just a simple cookbook and an incentive to buy “locally”, this guide proposes itineraries
and meetings with people who are farmers, first and foremost. Discover their products,
ways of doing things, harvests and flavours. According to late folk singer, poet
and writer Félix Leclerc – one of the island’s most famous residents – working on
the land was almost an art! Undoubtedly, a dash of eccentricity was needed to embark
on such a delicious endeavour, but we admit that it’s another great way to visit
the island. Let’s savour it and encourage it! Come taste the adventure… and happy
